Mini Cupcakes with Buttercream Frosting

A few weeks ago, we had a soccer party and aside from the desserts I already posted, I also made these mini cupcakes.

I love mini cupcakes—they’re so cute!!

But today’s focus is on the frosting.  Not a big deal– it’s your typical buttercream frosting.

But everyone seems to like it.

Even my husband will eat it.

Yeah, can you believe it??  Although not too much of it, let’s not get carried away.

Sorry—for those of you who have no clue what I’m talking about—my husband hates most frostings.

Did you just gasp?!

OK, moving on…

This buttercream frosting is perfect for piping.

And for filling cakes.

And for eating with a spoon.

And licking off your fingers.

Not that I do those things.  It was just a suggestion…


Buttercream Frosting (adapted from Wilton)
  • 1/2 cup (1 stick) butter
  • 1/2 cup vegetable shortening
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners’ sugar
  • 2 tablespoons milk

Cream shortening and butter. Add vanilla.

Add sugar, one cup at a time, beating well on medium speed.
Add milk and beat at medium speed until light and fluffy.
If using to pipe decorations, add 1 1/2 Tablespoons of light corn syrup and mix well.

  2. Buttercream frosting is THE BEST. And I also think it is wonderful eaten with a spoon! I love how you have piped it- perfect little stars 🙂

    Everything is cute in miniature, haha 🙂 I’ve actually never made icing with shortening, but I have a friend who makes the BEST cupcakes and she recently told me it’s all in the shortening for the icing! I have to try it!
