A few weeks ago, we had a soccer party and aside from the desserts I already posted, I also made these mini cupcakes.
I love mini cupcakes—they’re so cute!!
But today’s focus is on the frosting. Not a big deal– it’s your typical buttercream frosting.
But everyone seems to like it.
Even my husband will eat it.
Yeah, can you believe it?? Although not too much of it, let’s not get carried away.
Sorry—for those of you who have no clue what I’m talking about—my husband hates most frostings.

OK, moving on…
This buttercream frosting is perfect for piping.
And for filling cakes.
And for eating with a spoon.
And licking off your fingers.
Not that I do those things. It was just a suggestion…
- 1/2 cup (1 stick) butter
- 1/2 cup vegetable shortening
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners’ sugar
- 2 tablespoons milk
Cream shortening and butter. Add vanilla.
