Cupcakes with Marshmallow Frosting

Sorry, I’ve been on vacation and gone from my blog for a while.

What do you mean you didn’t notice??  I’m shocked.

Well anyway, here’s what I baked first when I got home:

So anyway, I went on a Disney cruise and spent most of my time eating.  🙂

And yes, in case you’re wondering, I asked for every dessert on the menu each time.

OK, now back to the cupcakes:

I had a tub of marshmallow creme that I bought a while ago because I thought it was cute.

Recently, I was thinking I should use it—when all of a sudden, my 3-year-old turned to me this weekend and asked for marshmallow cupcakes.

I have no idea where he got that from, but it was perfect timing.

So I made chocolate cupcakes with marshmallow frosting (which you probably know already if you read titles).

I didn’t really like the texture of the cupcakes (although they were flavorful)—so let’s forget that recipe.

But the marshmallow frosting was delicious!  Yum!

However, when I put the cupcake in front of my son, he looked at it strangely and asked where the marshallows were.

So this is what I had to do:

Marshmallow Frosting (adapted from Cooking With Paula Deen)

  • 1/2 cup butter, softened
  • 1 (7-ounce) jar marshmallow creme
  • 2-3/4 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Beat butter and marshmallow crème at medium speed with an electric mixer until smooth.

Gradually beat in confectioners’ sugar.

Beat in vanilla and milk.

  7. That made me giggle – my son would be exactly the same! I’ve just discovered marshmallow creme and am in love with it so MUST try this frosting. What’s the consistency? Do you think it would pipe or is it really best just spreading it?

  10. Mmm these look great! I’ve been looking for a good marshmallow frosting for awhile (all the s’mores creations I want to make!) and the consistency of this looks so smooth and spreadable 🙂
