Sorry, I’ve been on vacation and gone from my blog for a while.
What do you mean you didn’t notice?? I’m shocked.
Well anyway, here’s what I baked first when I got home:
So anyway, I went on a Disney cruise and spent most of my time eating. 🙂
And yes, in case you’re wondering, I asked for every dessert on the menu each time.
OK, now back to the cupcakes:
I had a tub of marshmallow creme that I bought a while ago because I thought it was cute.
Recently, I was thinking I should use it—when all of a sudden, my 3-year-old turned to me this weekend and asked for marshmallow cupcakes.
I have no idea where he got that from, but it was perfect timing.
So I made chocolate cupcakes with marshmallow frosting (which you probably know already if you read titles).
I didn’t really like the texture of the cupcakes (although they were flavorful)—so let’s forget that recipe.
But the marshmallow frosting was delicious! Yum!
However, when I put the cupcake in front of my son, he looked at it strangely and asked where the marshallows were.
So this is what I had to do:

Marshmallow Frosting (adapted from Cooking With Paula Deen)
- 1/2 cup butter, softened
- 1 (7-ounce) jar marshmallow creme
- 2-3/4 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
Beat butter and marshmallow crème at medium speed with an electric mixer until smooth.
Gradually beat in confectioners’ sugar.
Beat in vanilla and milk.
