4th of July Desserts 2013

I had a nice, relaxing 4th of July planned out, along with 2 simple and cute desserts.

But craziness always happens.

So let’s rename them “2 messy but yummy desserts.”

First, I made mini trifles—blueberry and strawberry cheesecake.

I decided to make them the night before the 4th, in case I ran out of time.

But it was at that time that we realized we needed to leave early in the morning, so I had to rush making them in order to get my kids off to bed.

And this is how they turned out:

The cream was sooo yummy.

Not very neat or pretty—but EVERYone loved them.

Yes, you heard right.  Even my husband.

Yeah, I was shocked too.

Then on the 4th, we planned to go to a science center to entertain the kids for an hour or two.

So… after 8 hours there, we closed the place down and had to drag them out.

Yes, 8  long, exhausting hours- during which they didn’t even want to stop to eat!

So now we only had a short amount of time to eat dinner, make the next dessert, and leave to see the fireworks.

Yep, I had been sure that I’d have plenty of time to make frosting for my brownie dessert– but I had ½ hour altogether.

I improvised and had to use Cool Whip, which of course, does not hold up very well.

So this is what happened (I had to make several):

I made the swirly things out of chocolate.

I was not happy that my desserts weren’t very pretty.

But hey, everyone loved this dessert too.

Two for two.

Wow. I can’t complain.

And by the way, we did make it in time to see the fireworks—in the pouring rain.  🙂

  1. how did you make those swirly things out of chocolate? It all looks divine 🙂 I get where you’re coming from as I’m like that, too, but keep in mind that when some folks are busy they buy stuff. You made it yourself 🙂

    • Thanks Liz– I feel better now. 🙂 For the swirly things, I melted chocolate and piped it onto wax paper. Then into the freezer for 10 minutes, and they’re done!

    Impressing, especially the swirly things. I have heard the jokes about the pronunciation of your “Cool Whip” on Family Guy but have never been quite sure what it was until now. Thanks.

  7. I love the swirly things sticking out of the cake. Sounds like it was a fun day with the kids. My kids are grown now, and it seemed so weird to go watch fireworks without them. Sorry you had rain!

    • Thanks! And yes, it was a fun day. 🙂 Even though it was busy and rainy, at least we made good memories that we’ll always remember– even when my kids are grown too!
